Crok’andises is an artisanal biscuit factory, set up in 2018 in Cournon d’Auvergne by Master Craftsman, Christophe Chevalier, after the sale of his two bakeries in Clermont-Ferrand. Passionate about his job as a pastry chef, he wanted to refocus with a more efficient production process, using traditional recipes and promoting Auvergne specialities such as Fourme d’Ambert, Saint Nectaire, Green Puy Lentil flour, etc.
He buys from local producers such as Les liqueurs de l’Abbaye in Saint Donat with whom he makes marshmallows and meringues. Crock’andises also offers fruit jellies, sweet and savoury biscuits and chocolates for the holidays. The products are distributed in delicatessens, cheese shops, wine cellars and in certain supermarkets in the region.
When the premises in Cournon were purchased, the priority was to reorganise the existing premises and to equip them with new equipment over time. The existing cold store was no longer suitable. As the business grew and became more successful, its needs changed and cold storage became essential for storing fruit purée and preserving dried fruit. During a training session at the Puy-de-Dôme Chamber of Trade and Crafts, the manager was made aware of the help available in changing from a refrigerant with a high greenhouse effect and contacted his refrigeration specialist ADVO to study the project.
Solstice® L40X was selected for a durable and long-lasting installation
To restart the existing 12m3 chamber, it needed to be refurbished and recharged with R-404A. The installer ADVO, specialising in bakery and catering equipment, recommended a new installation with Solstice® L40X (R-455A) in collaboration with the Rolesco agency of Clermont Ferrand, directed by Laurent Lelong
For all the stakeholders, choosing a refrigerant with a very low GWP (148) that would be safe in the years to come was an obvious choice.
Once the quotation was accepted by the Chambre des Métiers, ADVO’s manager, Emmanuel Dabert, selected the equipment with Rolesco, opting for a Silensys SILFH2511P-XC condensing unit from Tecumseh. This supplies the freezing chamber equipped with a Kelvion S-KSC-301-3BE-FX28 direct expansion cubic evaporator. To complete the installation, a universal control box and a Vigitemp temperature recorder were installed.
And it was easy to implement: “This condensing unit is reference technology for our business,” says Emmanuel Dabert. “Our technicians are used to installing this type of system and for them there is no difference with the other refrigerants on the market.”
For Laurent Lelong, the benefits of R-455A are obvious: “Very low GWP, better energy efficiency, less risk than using hydrocarbons and it is a sustainable solution.”
